In honor of Cinco de Mayo, I opted to make a fajita salad rather than celebrate with margaritas this year. I had never made the fajita salad before, but it turned out wonderful. I’ll definitely be making this again.

I’m currently without a working stove, so this was prepared on my trusty George Foreman grill!
Ingredients:
1 1/2 cups of salad greens
5 1/2 oz. of chicken breast
1/3 cup of Fat Free Cheddar Cheese
1/2 cup Black Beans
1/2 Pinto Beans
3/4 cup red onion
3/4 cup green pepper
1/2 cup mushrooms
= 6.5 Weight Watchers Points
Mix onions, peppers, mushrooms, and chicken breast in a bowl with fajita seasoning. Sautee’ on the grill for about 10-15 minutes.
Heat up beans in the microwave.
Pretty easy to figure out the rest!
Next time I may add tomatos and/or salsa to the mix. Need some more color!

Hey, how did you figure it was 6.5 points? I input the recipe into WW online and it came out to be 8.5 points.
5- chicken
1- cheese
1- black beans
1.5- pinto beans
Did you use canned beans and chicken breast?
OOOPS! My bad, chicken is 5.5 oz RAW not cooked! Sounds like a winner.
